Schedule refrigerator defrosting time for frozen birds. Plan on 3 days for a 20-pound turkey. 
Don’t forget to remove the neck and bag of giblets before defrosting the turkey
No rack? No problem. Place a row of celery ribs under the turkey to keep the bird from resting on the bottom of the pan.
For more even cooking, bake stuffing or dressing in separate casserole pans instead of inside the turkey. Fill the turkey cavity with celery and halved or quartered onions and oranges to flavor the bird.
Baste the turkey with pan drippings every 20 to 45 minutes to keep the turkey moist.
